Born in Catania, Sicily, Grimaldi was the son of director and screenwriter Giovanni Grimaldi, which provided him with a strong foundation in the film industry. He began his career as an assistant director on his father's films, accumulating valuable experience and knowledge.

Grimaldi made his directorial debut in 1967 with the film Nel sole, which achieved remarkable success and featured the popular singing duo Al Bano and Romina Power. He went on to collaborate with the duo in subsequent films, including L'oro del mondo in 1968 and Pensando a te in 1969.

Beyond his work in the musicarello genre, Grimaldi also directed several commedie sexy all'italiana, such as When Women Were Called Virgins in 1972.
